Raw Vegan Enchiladas

Despite their differences from actual enchiladas, these raw vegan enchiladas are to die for. The tortillas are a raw tomato and corn mixture, the cheese is a creamy cashew sauce. The meat is made of walnuts mixed with coriander and cumin, and the unbelievably amazing salsa is a combination of avocado, onion, tomato, and cilantro. Not only that, but once you’ve got the tortillas dehydrated, they’re surprisingly fast and easy to put together.

This recipe is dairy free, vegan and raw vegan.

Ingredients

Tortillas:
½ c onion, chopped
1 c corn
1 c tomatoes, chopped
¼ c ground flax seeds
salt to taste
pepper to taste

Cheese:

1 c cashews
¼ nutritional yeast
2 tbsp miso
½ tsp turmeric
1 clove of garlic
¾ c water (to be used as needed)
juice of ½ lemon

Meat:

1/3 c walnuts
1/3 c pumpkin seeds
1 tbsp extra virgin olive oil
cumin to taste
coriander to taste
salt to taste

Salsa:

2 tomatoes
½ onion
1/3 c cilantro
juice of ½ lemon
½ bell pepper
½ jalapeño pepper (optional)
salt to taste
pepper to taste

To prepare the tortillas, put the corn, tomatoes, and onion into the food processor and pulse it together until it becomes a mash. Then, add the ground flax seeds, salt, and pepper and continue processing it until it becomes thick.

On several dehydrator sheets, make 3 – 4 large flat circles with the mixture. Allow them to dry in your dehydrator for several hours or until they are dry but still pliable. If you don’t have a food dehydrator, you can also place them in your oven set at the lowest temperature.

To prepare the cheese, blend all of the cheese ingredients together until they become smooth and creamy. Then, set it aside.

To prepare the meat, pulse the meat ingredients together in a food processor until they are crumbly, then set them aside.

To prepare the salsa, chop up the avocado, tomatoes, onion, cilantro, and peppers. Add salt and pepper to taste and then mix them together with the lemon juice.

To assemble your enchiladas, fill each tortilla with an even amount of cheese, meat, and salsa. Then, fold them closed and add any remaining cheese and other fillings to the top, and enjoy!
